Food design - Beyond taste

We do not only react to the food we taste

but also to what we see, hear, smell and touch ...

it's  a multi-sensory experience.

and it's a design process:

 

  1. THE WHY what is the desired effect aimed?

  2. THE HOW  what is the desired experience?

  3. THE WHAT what objects/materials brings out that experience?

  4. THE SENSE what are the sensory properties of the samples?

  5. INTEGRATION what is the sensory experience going to be?

  6. DESIGN translating the findings in a coherent design!
